All the delicious “in season” ingredients here in these delectably impressive yet simple Antipasto Roll-Ups 🌻
These can also EASILY be made ‘zero waste’ by not using plastic bags when buying your eggplants (just chuck them right in your trolley / basket and wash them when you get home) 🍆 making your own oven dried tomatoes (they are so easy!) 🍅 and buying olives at the deli section of your grocery store and taking your own container for the deli staff to put the olives into 🥡 Oh and grab your basil from a friend who grows it, or from a fruit / veg store / farmers market that sells by the bunch without bags, pots, etc 🌱
2 large eggplants
1 block @thevegandairy Herb and Garlic soft cheese
2 Tbl sliced kalamata olives
2 Tbl semi sundried tomatoes, roughly chopped
1/2 Tbl Fresh basil, roughly chopped
Slice the eggplants lengthways into 1/2 cm thick slices. Pan fry in a pan on med-high heat for 2mins each side until you have soft/pliable slices that can be easily rolled (you can also use a sandwich press for this!). Allow to cool.
Meanwhile, mash together the garlic and herb cheese, olives, sundried tomatoes and fresh basil until well combined.
Spread the cheese mixture into a sausage shape at the larger end of an eggplant slice and roll it up! Repeat with the remaining eggplant slices and cheese mixture. Serve with capsicum dip, balsamic vinegar or enjoy as is.
