Growing up with Polish grandparents, Pierogi was always a nostalgic thing to eat with my Buba. It has been a LONG time, though, since I have had them!! These ‘Cheats Pierogi’ are simple, easy, and really hit the spot! That Dill Chèvre really cranking up the Polish flavour bomb!! 😆💥
INGREDIENTS
💚 4 large potatoes, peeled and diced
💚 1/2 tsp salt
💚 2 Tbl @thevegandairy Cultured Butter
💚 1/2 tsp onion powder
💚 1 packet @thevegandairy Dill Chevre
💚 Dumpling wrappers
Boil the potatoes in a pot of water, about 20minutes, or until they become soft enough to pierce with a fork. Allow to cool for five minutes before mashing them. Fold in the salt, butter and chevre and set aside.
Add about half a tablespoon of the potato mixture to each dumpling wrapper. Use your finger to wet the edge of the wrapper and pinch to seal. Bring a pot of salted water to a boil before adding the pierogi a few at a time. Once they float to the top they are cooked!
Top with whatever pierogi toppings you like. We added some facon, spring onions, fresh dill, and @thevegandairy Creme Fraiche.
