Cheesey Loaded Baked Potatoes

INGREDIENTS
1 large potato per person eating
@thevegandairy Cultured Butter
@thevegandairy Hemp Mozzarella
Vegan mince / TVP
1 Brown or red onion, chopped
2-3 Spring onions, chopped
2-3 Celery stalks, chopped
1-2 Carrots, chopped
Tomato pasta sauce
Salt to taste
Oil for cooking
Extra toppings of your choice (herbs, avo, vegan sour cream, etc)

METHOD

FOR THE POTATOES: Clean your potatoes if needed, and pierce skins with a fork a few times each. Pop them in an oven proof dish, rub with a little oil, and bake in the oven at 220c for about 40-60 minutes. Check them regularly, flipping over about halfway so they cook evenly. They are ready when a fork or sharp knife easily pierces them and they feel soft

FOR THE MINCE: If using TVP, prepare this as per packet instructions. Fry your brown / red onion with some oil in a pan first until fragrant. Add mince / pre-prepared TVP, celery, carrots, and spring onions to the pan and fry all together for a few minutes. Once mixed well and browned, add your tomato sauce and cook together really well till its all delicious looking and smelling and all saucy and yum! Add salt to your taste preference

ASSEMBLY: Take your potatoes out of the oven, cut a cross onto the top of each of them and spread them out a little so that your fillings will sit inside the opened up potato. Pop potatoes on a plate and layer up with butter, mince, mozzarella, fresh herbs (I used coriander here!), and any other toppings you might like such as avocado, vegan sour cream, etc. And dig in!! 🀀
