1 packet @thevegandairy Shredded Hemp Mozzarella
1 packet @thevegandairy soft cheese of choice (I used herb and garlic here)
1 Tbl onion powder
1/2 Tbl garlic powder
1/2 cup vegan mayonnaise
2 cups chopped fresh baby spinach
2 tbl chopped fresh chives
Salt and pepper to taste
1 sourdough cob loaf
Preheat oven to 180C
Slice off the top of the cob loaf, remove the fluffy bread from the inside and set aside.
In a large bowl, mix together all remaining ingredients. Add the mixture to the middle of the cob loaf, place the top of the bread back on top, put it on an oven tray and bake for 20 mins.
Meanwhile break the inside of loaf into bite size pieces, toss in olive oil (optional) and add to the baking tray for the last 5 mins of cooking (remove the bread lid for these last 5mins too)
