Need some mid-week spoiling? Super fancy, but super easy, these Cherry & Ashed Chèvre Filo Cigars by @veganonthegc are a hit whether you are alone for the night, or trying to impress your fam / buddies 🎉
Preparation time: 20 minutes, cooking time: 30 minutes
Makes 4-6
INGREDIENTS
🍒 14-16 black cherries
🍒 1 Tbs coconut sugar
🍒 1 red onion, finely sliced
🍒 1 small beetroot, grated
🍒 1-2 tsp black cherry vinegar
🍒 Filo Pastry Sheets
🍒 Melted @thevegandairy Cultured Butter
🍒 1/3 block @thevegandairy Ashed Chèvre
METHOD
In a saucepan add the onion, sugar, beetroot, cherries & vinegar, and simmer over low heat until reduced, soft and sticky
Cut the filo pastry sheets into 15cm squares. Place one sheet on a plate, brush with melted vegan butter, and repeat 3 times layering 4 squares of pastry on top of one another. Turn the pastry so it looks like a diamond and spoon jam into the centre. Dollop Ashed Chevre & a few walnut pieces on top of the jam. Fold the end of the pastry over the filling, fold in the sides, and brush with butter
Bake in a preheated oven at 180’C until crispy and golden. Serve with a black cherry jam to dip into. Optional: add a few pieces of fresh cherry to each cigar before rolling
