CRUST:ā

š 1 packet chocolate ripple biscuits, crushedā
š 1/4 cup @thevegandairy cultured butter, meltedā
š Pinch of saltā
ā
FILLING:ā
ā
š 2 blocks @thevegandairy ashed chevreā
š 200ml coconut creamā
š 1/2 tin condensed coconut milkā
š 1/4 Cup tinned black pitted cherries, plus 1/4 cup of the juiceā
š 1.5 Tbl lemon juiceā

METHOD:ā

Mix together the crushed chocolate biscuits, butter and salt. Press the mixture into a baking paper lined slice tin or spring form cake pan. You can use the base of a glass to pack the mixture in firmly. Place in the fridge. Meanwhile, add all filling ingredients to a blender apart from the cherries. Blend until well combined. Pour the filling mixture onto the crust. Drop the cherries into the filling mixture at evenly spaced intervals. If you have leftover cherry juice you can add some swirls at the top. Place in the fridge for 1 hour or until set. Yummy yummy in your tummy!!ā
