200g @thevegandairy Cultured Butter, softened to room temperature
1/2 cup caster sugar
1/4 cup rice flour
1 3/4 cups plain flour
Pinch of salt
1/2 tsp vanilla essence (optional)
Preheat oven to 150C. In a large bowl add the softened butter, sugar and vanilla and use a mixer on a medium setting to combine.
Sift in the flours and salt. On your mixer’s lowest setting, or using a spoon, mix gently until the mixture forms what looks like large crumbs that will hold together. Don’t overwork the dough or it will make the shortbread tough and not crumbly.
Roll the dough into two logs, about 3cm in diameter, then cut into about 1cm thick discs. Place the rounds onto baking paper lined trays and bake at 150C for 20-25minutes, until bottom of shortbread is slightly golden.
Allow to cool for 10mins on the tray before transferring to a wire rack
