Feeling like a good old (but also fancy, easy, and not ‘old’) pasta tonight? Try this creamy Herb and Garlic Rigatoni with lashings of Aged and Smokey by @veganonthegc 🌿🧀
Preparation time: 10mins, cooking time: 20 mins
Serves 4
INGREDIENTS
🍝 250g Rigatoni
🍝 ½ TVD Herb & Garlic Boursin
🍝 ½ zucchini, diced
🍝 6-8 button mushrooms, diced
🍝 ½ red onion, diced
🍝 2 cloves garlic, crushed
🍝 Handful of Baby Spinach
🍝 Approx ¼ cup soy milk – as required
🍝 ¼ lemon, juiced
🍝 2 Tbs toasted pine nuts
🍝 1/3 TVD Aged & Smokey
METHOD:
Saute the onion for two minutes until softened, add garlic, zucchini & mushroom, saute until softened, stir through spinach
In a separate small saucepan, gently melt the Herb & Garlic Boursin with the soy milk and combine into a thick sauce.
Add the cooked pasta and sauce to the vegetables and gently fold together until well combined. Drizzle a little lemon juice, grate the Aged & Smokey over the top & sprinkle with toasted pine nuts. Season with cracked pepper
