Feeling like a good old (but also fancy, easy, and not ‘old’) pasta tonight? Try this creamy Herb and Garlic Rigatoni with lashings of Aged and Smokey by @veganonthegc 🌿🧀⁠

Preparation time: 10mins, cooking time: 20 mins ⁠
Serves 4⁠

🍝 250g Rigatoni⁠
🍝 ½ TVD Herb & Garlic Boursin⁠
🍝 ½ zucchini, diced⁠
🍝 6-8 button mushrooms, diced⁠
🍝 ½ red onion, diced⁠
🍝 2 cloves garlic, crushed⁠
🍝 Handful of Baby Spinach⁠
🍝 Approx ¼ cup soy milk – as required ⁠
🍝 ¼ lemon, juiced⁠
🍝 2 Tbs toasted pine nuts⁠
🍝 1/3 TVD Aged & Smokey⁠


Saute the onion for two minutes until softened, add garlic, zucchini & mushroom, saute until softened, stir through spinach⁠

In a separate small saucepan, gently melt the Herb & Garlic Boursin with the soy milk and combine into a thick sauce.⁠

Add the cooked pasta and sauce to the vegetables and gently fold together until well combined. Drizzle a little lemon juice, grate the Aged & Smokey over the top & sprinkle with toasted pine nuts. Season with cracked pepper⁠
