Introducing our newest obsession: Creamy Lemon Pasta! Made with fresh tangy lemons and a silky smooth cream sauce, this pasta dish is the perfect blend of bright and comforting flavours. Plus, it’s quick and easy to make, making it the perfect weeknight dinner for busy families.
1 head of cauliflower, cut into florets
1 small head of garlic/5 large cloves
1 cup plant milk
1 packet @thevegandairy Shredded Mozzarella
Juice and zest of one lemon
1/2 tbl white miso paste
salt and pepper to taste
Pasta of choice
Preheat oven to 220C.
Drizzle the cauliflower and garlic with some olive oil, salt and pepper plus about 1/4 cup water and roast for 30mins or until florets are fork tender. Allow to cool. Meanwhile cook pasta according to packet, reserving 1/2 cup pasta water.
Once cooled, add the cauliflower, garlic, plant milk and miso paste to a blender and blend until smooth.
In a pan over medium heat, heat up the cauliflower purée before adding in the mozzarella and 1/2 cup of pasta water. Once the cheese is melted and combined, add in the pasta, lemon, dill, salt and pepper and enjoy!
