Curry Mince Pasties with the Red Bell Pepper cheese by @delightfulvegans

🥟 1 Tbsp olive oil⁠
🥟 1 small red onion, diced⁠
🥟 2 small potatoes, diced⁠
🥟 ½ green capsicum, diced⁠
🥟 1 teaspoon ginger⁠
🥟 1 teaspoon curry powder⁠
🥟 1 teaspoon cumin powder⁠
🥟 1 teaspoon coriander powder⁠
🥟 ½ teaspoon turmeric powder⁠
🥟 ¼ teaspoon cinnamon⁠
🥟 500g vegan mince (used V2 mince)⁠
🥟 ¼ pack Red Bell Pepper Boursin⁠
🥟 1 or 2 pastry sheets⁠

Cook the onion, potatoes, capsicum in the oil for 5 minutes, until softening. Add the ginger and spices, cook for a further 5 or 10 minutes, till fragrant. Then add the mince and cook until mince is cooked through. Let cool. Let pastry sheets thaw slightly so you can use them easily. Cut into triangles and spoon a bit of the mince mixture onto half the triangle, then top with a some of the Red Bell Pepper Boursin. Fold into a pastie shape and bake in a pre-heated oven for 30 to 40 minutes until pastry is golden brown and ready. Enjoy!⁠
