Lazy Sunday dinner SORTED right here 👋🏼 with these Dill Chèvre Stuffed Shells, topped with Hemp Smoked Mozzarella, whipped up by @that_vegan_dad 💛
INGREDIENTS:
🍝 250g Pasta Shells
🍝 1 brown onion, diced
🍝 2 garlic cloves, minced
🍝 1 carrot, diced
🍝 1 zucchini, diced
🍝 1 can diced tomatoes
🍝 2 tbsp tomato paste
🍝 2 cups vegetable stock
🍝 190g @thevegandairy Dill Chevre
🍝 @thevegandairy Hemp Smoked Mozzarella, grated
METHOD:
Cook pasta as per packet instructions and preheat oven at 180c. Meanwhile, add olive oil to a frypan and cook onion and garlic until lightly browned. Add in carrot and zucchini and cook until tender
Add in diced tomatoes, tomato paste and vegetable stock. Allow to simmer until sauce begins to thicken. Take off heat
Place sauce in a prepared oven dish and scatter mozzarella cheese over the top. Place Dill Chèvre into a large bowl and beat until smooth. Spoon into cooked shells and arrange in prepared oven dish
Place in oven for about 10-15 minutes until cheese has slightly melted and pasta is lightly browned.
