Dill Chèvre Stuffed Shells

Lazy Sunday dinner SORTED right here 👋🏼 with these Dill Chèvre Stuffed Shells, topped with Hemp Smoked Mozzarella, whipped up by @that_vegan_dad 💛⁠

INGREDIENTS:⁠

🍝 250g Pasta Shells⁠
🍝 1 brown onion, diced⁠
🍝 2 garlic cloves, minced⁠
🍝 1 carrot, diced⁠
🍝 1 zucchini, diced⁠
🍝 1 can diced tomatoes⁠
🍝 2 tbsp tomato paste⁠
🍝 2 cups vegetable stock⁠
🍝 190g @thevegandairy Dill Chevre⁠
🍝 @thevegandairy Hemp Smoked Mozzarella, grated⁠

METHOD:⁠

Cook pasta as per packet instructions and preheat oven at 180c. Meanwhile, add olive oil to a frypan and cook onion and garlic until lightly browned. Add in carrot and zucchini and cook until tender⁠

Add in diced tomatoes, tomato paste and vegetable stock. Allow to simmer until sauce begins to thicken. Take off heat⁠

Place sauce in a prepared oven dish and scatter mozzarella cheese over the top. Place Dill Chèvre into a large bowl and beat until smooth. Spoon into cooked shells and arrange in prepared oven dish⁠

Place in oven for about 10-15 minutes until cheese has slightly melted and pasta is lightly browned⁠.
