I have a bit of an obsessive relationship with corn chips š Not interested at all in potato chips, but corn chips…………. ain’t nobody sharing my packet!! ha!! š· So this Fajita Queso Dip made with our Red Bell Pepper soft cheese is right up my corn-chip-obsession alley šā

FOR THE SEASONINGā

2 tsp ground cuminā
2 tsp smoked paprikaā
2 tsp sweet paprikaā
2 tsp brown sugar (can omit if you prefer)ā
1 tsp ground corianderā
1 tsp oreganoā
1 tsp garlic powderā
1 tsp onion powderā
1 tsp cayenne pepperā
1 tsp saltā

FOR THE DIPā
ā
1 red capsicum, slicedā
1/2 a red onion, slicedā
1 Tbl fajita seasoningā
1 tsp olive oilā
1 blockĀ @thevegandairyĀ Red Bell Pepperā
Lime and coriander to serveā

METHODā
ā
Preheat oven to 200C. In a small baking dish add the capsicum, onion, oil and seasoning and toss to combine. Bake for 10-15 minutes. Place the block of cheese on top of the mixture and bake for 10 minutes, or until warm and melty. Once out of the oven, top with fresh coriander and a squeeze of lime. Grab some tortilla chips and enjoy!ā
