I have a confession to make.. I have a bit of an obsessive relationship with corn chips 😆 Not interested at all in potato chips, but corn chips…………. ain’t nobody sharing my packet!! ha!! 🐷 So this Fajita Queso Dip made with our Red Bell Pepper soft cheese is right up my corn-chip-obsession alley 🎉
FOR THE SEASONING
2 tsp ground cumin
2 tsp smoked paprika
2 tsp sweet paprika
2 tsp brown sugar (can omit if you prefer)
1 tsp ground coriander
1 tsp oregano
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1 tsp salt
FOR THE DIP
1 red capsicum, sliced
1/2 a red onion, sliced
1 Tbl fajita seasoning
1 tsp olive oil
1 block @thevegandairy Red Bell Pepper
Lime and coriander to serve
METHOD
Preheat oven to 200C. In a small baking dish add the capsicum, onion, oil and seasoning and toss to combine. Bake for 10-15 minutes. Place the block of cheese on top of the mixture and bake for 10 minutes, or until warm and melty. Once out of the oven, top with fresh coriander and a squeeze of lime. Grab some tortilla chips and enjoy!
