2 Tbl @thevegandairy butter
1 large brown onion, thinly sliced
1 Tbl balsamic or sherry vinegar
1 tsp fresh thyme
Salt and pepper to taste

Melt the butter in a pan over med-low heat. Add the onion and cook until it begins to become translucent and soft. Add the vinegar, thyme, salt and pepper and continue to cook until the onions caramelise and the mixture becomes thick and jammy (around 10-15 minutes). Spread the onion mixture on the sourdough and top generously with the smoked mozzarella. Toast in a grill or air fryer until bread is crispy and cheese is melted. You can also add a top piece of bread and cook it in a sandwich press.
