It has been a while since we shared one of these, but we are excited to start back with a SUPER SIMPLE but SUPER flavour punch with this very seasonal blend of flavours that perfectly compliment our Herb Garlic cheese. This microboard features pumpkin skin chips and oven semi-dried tomatoes (aka “Dads Roasted Romas”) with a balsamic vinegar drizzle and fresh thyme. All growing in the garden. All homemade. PUMPKIN SKIN CHIPS
π Skin a butternut pumpkin
π Coat the skins in olive oil, salt and ground pepper
π Bake at 200 degrees until the skins are brown and crispy
DADS SEMI-ROASTED ROMAS

Cut tomatoes into quarters

Put on a drying / aeration oven tray (a tray with holes to circulate air while cooking) or on the grill if they are not too small

Oven at 150C for around 2 hours
BALSAMIC DRIZZLE
πΎ Add equal parts Balsamic Vinegar and Olive Oil to a jar, with some fresh thyme leaves (or other herb of choice) and give it a really good shake to emulsify (combine together)
SERVE WITH ADDITIONAL FRESH THYME LEAVES AND THYME FLOWERS (THEY ARE SO PRETTY AND TASTE JUST LIKE THE HERB!) πΈπ±
