Ingredients (serves 4):
1-2 jars TVD ‘Creme Fraiche’
2 cups oats
1 ½ cups coconut flakes
1/2 cup sultanas
1/3 cup cranberries
1 cup mixed nuts
1 ½ cups pepitas, sesame and flaxseeds
1 tbsp cinnamon
1 cup coconut oil
1 tspn salt
4 tbsp maple syrup
1 tspn vanilla essence
3 apples, chopped
1 punnet raspberries
Handful blackberries
6 strawberries
4 passionfruit
2 lemons zest and juice
Method:
In a blender or food processor blitz nuts until crumbly with some chunks and set aside in a bowl. Blitz the oats and coconut flakes into a chunky crumble.
In a pan melt coconut oil, then add the nut and oat mixtures, seeds, 2 tspn cinnamon and 1 ½ tbsp maple syrup and stir until lightly toasted. Remove from heat and spread on a lined baking tray
Bake at 150C until golden brown, stirring every 4-5 mins to ensure it doesn’t burn
In a bowl add TVD yoghurt, raspberries, lemon zest and juice, passionfruit pulp, vanilla and 1 tbsp maple syrup, stir to combine
Using the same pan as before, add chopped apples, 2 tspn cinnamon and 1 ½ tbsp maple syrup, and cook on low for around 10 mins until soft and fragrant
When granola is ready, remove from oven and allow to cool before transferring to an airtight container for storage
To serve, add the yoghurt mix, granola and stewed apples to a bowl. Top with fresh berries and voila!
