For all of the snackers out there, we see you! Next time you’re feeling peckish, try this Lemony Dill Chèvre White Bean Smash. 👌😏
INGREDIENTS
Sourdough bread
Olive oil
Large clove of garlic
1 tin white beans, drained and rinsed
@thevegandairy Dill Chèvre (measure with your ♥️ but keep some aside to top)
Juice and zest of a small lemon
Salt and pepper
Fresh dill for topping
METHOD
In a bowl mash together the white beans, lemon juice and salt and pepper. Gently stir through the Dill Chèvre and set aside. Toast the sourdough and drizzle generously with olive oil. Cut the clove of garlic in half lengthwise, and rub the cut sides on the toast. Top the toast with the bean smash, the extra Chèvre and some fresh dill
And…. drool 🤤
