Mexican Pinwheels with our Red Bell Pepper Soft Cheese! This cheese really does go so well with Mexican inspired flavours / dishes. Make a double or triple batch of these and have all week for your lunches – you won’t regret it!
INGREDIENTS
💚 Large flour tortillas
💚 @thevegandairy Red Bell Pepper Soft Cheese
💚 1 x can refried beans
💚 Tomatoes, finely diced
💚 Avocado, finely diced
💚 Lime juice
💚 Chipotle powder or taco seasoning
💚 Fresh coriander and fresh chives
💚 Corn chips, crushed
METHOD
Briefly warm the tortillas in a sandwich press or microwave until they become soft and pliable. About 15-20 seconds. Using the back of a spoon, spread the red pepper cheese on the tortillas, all the way to the edges. If the cheese is too stiff, you can warm the spoon with hot water (just make sure you dry it so you don’t make the pinwheels soggy). Repeat the process with the refried beans.
Sprinkle the tortillas with the tomatoes, and avocados, kinda like you’re topping a pizza. Season with lime juice, chipotle/taco seasoning, herbs and a couple of crushed up corn chips. Tightly roll up the pinwheels, wrap them with some baking paper and refrigerate them for at least 30 minutes (this will make them easier to cut).
Slice into 1-2cm rounds and enjoy! These are great to make ahead because the avocado is enclosed tightly in the wrap, so it won’t go brown!
