Mmmmmm Quinoa and Feta Burgers 🍔🥑 .. thanks to @littleaudrey for this delicious looking weekend treat 🌿⁠

INGREDIENTS:⁠

2.5 cups cooked quinoa⁠
Chia eggs: 2 Tbl chia seeds + 6 Tbl water⁠
1/4 cup plain flour⁠
2 Tbl water⁠
2 Tbl fresh chives, chopped⁠
2-3 Tbl chopped fresh cilantro/coriander (can sub 1 Tbl of chopped fresh mint) ⁠
1/2 tsp cumin seeds⁠
1 tsp ground coriander⁠
1/8 tsp cinnamon⁠
1/2 tsp ground ginger⁠
1 tsp paprika⁠
1/2 tsp garlic powder⁠
1 tsp baking powder⁠
1 Tbl white wine vinegar⁠
1 jar @thevegandairy Persian feta, diced⁠
1 cup roasted pumpkin, diced⁠
Salt and pepper to taste⁠

METHOD:⁠

💚 Preheat oven to 200C/400F and line an oven tray with baking paper.⁠
💚 Mix the chia seeds and water in a small bowl and set aside. They will thicken up after about 5 mins or so.⁠
💚 Combine everything, except the feta and pumpkin, in a large bowl and stir until well combined before gently folding the pumpkin and feta through the mix.⁠
💚 Use a 1/3 cup measure to evenly divide the mixture and shape into patties. You may need to wet your hands a little to prevent the mixture sticking. Place the patties on the tray and cook for 30 mins, carefully flipping half way. They should be golden and crispy.⁠
💚 Add patties and your favourite burger accompaniments to a bun and enjoy!⁠
