Mmmmmm Quinoa and Feta Burgers 🍔🥑 .. thanks to @littleaudrey for this delicious looking weekend treat 🌿
INGREDIENTS:
2.5 cups cooked quinoa
Chia eggs: 2 Tbl chia seeds + 6 Tbl water
1/4 cup plain flour
2 Tbl water
2 Tbl fresh chives, chopped
2-3 Tbl chopped fresh cilantro/coriander (can sub 1 Tbl of chopped fresh mint)
1/2 tsp cumin seeds
1 tsp ground coriander
1/8 tsp cinnamon
1/2 tsp ground ginger
1 tsp paprika
1/2 tsp garlic powder
1 tsp baking powder
1 Tbl white wine vinegar
1 jar @thevegandairy Persian feta, diced
1 cup roasted pumpkin, diced
Salt and pepper to taste
METHOD:
💚 Preheat oven to 200C/400F and line an oven tray with baking paper.
💚 Mix the chia seeds and water in a small bowl and set aside. They will thicken up after about 5 mins or so.
💚 Combine everything, except the feta and pumpkin, in a large bowl and stir until well combined before gently folding the pumpkin and feta through the mix.
💚 Use a 1/3 cup measure to evenly divide the mixture and shape into patties. You may need to wet your hands a little to prevent the mixture sticking. Place the patties on the tray and cook for 30 mins, carefully flipping half way. They should be golden and crispy.
💚 Add patties and your favourite burger accompaniments to a bun and enjoy!
