INGREDIENTS:â
â
2.5 cups cooked quinoaâ
Chia eggs: 2 Tbl chia seeds + 6 Tbl waterâ
1/4 cup plain flourâ
2 Tbl waterâ
2 Tbl fresh chives, choppedâ
2-3 Tbl chopped fresh cilantro/coriander (can sub 1 Tbl of chopped fresh mint) â
1/2 tsp cumin seedsâ
1 tsp ground corianderâ
1/8 tsp cinnamonâ
1/2 tsp ground gingerâ
1 tsp paprikaâ
1/2 tsp garlic powderâ
1 tsp baking powderâ
1 Tbl white wine vinegarâ
1 jar @thevegandairy Persian feta, dicedâ
1 cup roasted pumpkin, dicedâ
Salt and pepper to tasteâ

METHOD:â
â
đ Preheat oven to 200C/400F and line an oven tray with baking paper.â
đ Mix the chia seeds and water in a small bowl and set aside. They will thicken up after about 5 mins or so.â
đ Combine everything, except the feta and pumpkin, in a large bowl and stir until well combined before gently folding the pumpkin and feta through the mix.â
đ Use a 1/3 cup measure to evenly divide the mixture and shape into patties. You may need to wet your hands a little to prevent the mixture sticking. Place the patties on the tray and cook for 30 mins, carefully flipping half way. They should be golden and crispy.â
đ Add patties and your favourite burger accompaniments to a bun and enjoy!â
