Mushroom and Chickpea Stroganoff

Is anyone else’s favourite dish in the whole world a really good stroganoff? This Mushroom and Chickpea Stroganoff by @littleaudrey has totally hit the spot for me!! Yum. Yum. Yum. Currently drooling on the screen 🤤⁠


INGREDIENTS⁠

1 Tbl olive oil (optional)⁠
1/4 tsp smoked paprika⁠
1/2 tsp paprika⁠
1/2 tsp onion powder⁠
1 tsp garlic powder⁠
1/2 tsp cracked black pepper⁠
1/2 Tbl cornstarch⁠
250g mushrooms⁠
1 tin chickpeas, drained and rinsed⁠
1/2 Tbl Dijon mustard⁠
1/2 Tbl soy sauce⁠
2 cups vegan beef style stock⁠
1/2 jar @thevegandairy Crème Fraîche⁠
Juice of 1/2 a lemon⁠
Salt to taste⁠
A few handfuls of baby spinach⁠

METHOD⁠

Heat the oil in a large frying pan over med heat. Add the mushrooms and chickpeas, along with the cornstarch, paprikas, onion powder, garlic powder and pepper and cook for about 5 min, stirring frequently.⁠

Add the mustard, soy sauce and stock. Bring to a boil before reducing the heat to a gentle simmer and cook 5-7 mins. Add the crème fraîche and lemon juice and spinach and stir through until the spinach wilts. Add salt to taste.⁠

Serve on top of your favourite pasta or mashed potato or rice or… whatever carb you like!⁠
