Is anyone else’s favourite dish in the whole world a really good stroganoff? This Mushroom and Chickpea Stroganoff by @littleaudrey has totally hit the spot for me!! Yum. Yum. Yum. Currently drooling on the screen 🤤
INGREDIENTS
1 Tbl olive oil (optional)
1/4 tsp smoked paprika
1/2 tsp paprika
1/2 tsp onion powder
1 tsp garlic powder
1/2 tsp cracked black pepper
1/2 Tbl cornstarch
250g mushrooms
1 tin chickpeas, drained and rinsed
1/2 Tbl Dijon mustard
1/2 Tbl soy sauce
2 cups vegan beef style stock
1/2 jar @thevegandairy Crème Fraîche
Juice of 1/2 a lemon
Salt to taste
A few handfuls of baby spinach
METHOD
Heat the oil in a large frying pan over med heat. Add the mushrooms and chickpeas, along with the cornstarch, paprikas, onion powder, garlic powder and pepper and cook for about 5 min, stirring frequently.
Add the mustard, soy sauce and stock. Bring to a boil before reducing the heat to a gentle simmer and cook 5-7 mins. Add the crème fraîche and lemon juice and spinach and stir through until the spinach wilts. Add salt to taste.
Serve on top of your favourite pasta or mashed potato or rice or… whatever carb you like!
