We had all just huddled in Sambas room laughing at how Satya had cutely (and naughtily) crawled into his cot for a cuddle and interrupted his nap when the walls started shaking! Not sure about you but we got pretty freaked out there for a minute 🥴 The earth herself is talking!! 🌏
Anyway.. I’m off to make this totally delectable No Bake Choc Ginger Slice now to settle my nerves.. Want some? 🌻
INGREDIENTS:
🧡 1 x 250g packet ginger nut biscuits
🧡 1/4 cup @thevegandairy Cultured Butter, melted
🧡 2 tblspn golden syrup
🧡 Pinch salt
🧡 1 jar @thevegandairy Dutch Chocolate Crème
🧡 2 tblspn uncrystallised ginger, chopped into small pieces
🧡 1 block vegan chocolate (minimum 100g)
METHOD:
In a blender or food processor crush the ginger nut biscuits until they are a fairly even consistency (not powdered, but not chunky). In a large bowl mix together the biscuits, melted butter, golden syrup and salt and mix until well combined.
Pour the mixture into a baking paper lined slice pan. Using the back of a metal spoon or a small glass, press the mixture firmly into the pan (it doesn’t have to fill the whole tray) until it is about 1-2cm thick. Scoop the @thevegandairy Dutch Chocolate Crème on top of the biscuit base and spread it evenly. Place the ginger pieces on top and gently press them into the creme.
Melt the chocolate (either in the microwave in 30 second intervals at medium heat or on the stove using the Bain-marie method). For a glossier finish, melt an extra 1/2 tablespoon of @thevegandairy Culture Butter with the chocolate. Pour the chocolate over top of the slice, spreading it out gently as needed. Place the slice in the fridge and allow to cool for minimum one hour. Slice and serve
