I love autumn and the clear change of seasons that comes with trees changing colour, leaves in the streets to kick around with the kids, and the fresh crisp mornings where you start to be able to dress all cosy and warm. AND of course enjoying hearty warming foods like this one-pan gnocchi wonder, using only 4 ingredients! This baked Pumpkin Sage Gnocchi is so simple and quick, you will not be disappointed! It is also super affordable to make! 🎃🧡🙌
INGREDIENTS
Serves 8-10
1 – 2 packs potato gnocchi – $2.50 each
1 butternut pumpkin – $7.00
Large bunch sage – $3.20
1/2 jar @thevegandairy Cultured Butter – $5.25
TOTAL COST – $17.95
METHOD
Preheat your oven to about 200 degrees celcius fan forced. Add your Cultured Butter into the oven dish you will use and pop it in the oven while it warms to melt the butter.
Meanwhile chop your pumpkin into small pieces. We leave the skin on to reduce waste and also add extra texture to the meal, and the skins contain a lot of nutrients we prefer to enjoy. Also – we paid for those skins, may as well make use of them, right? 😉 Grab your oven tray out and pop your chopped pumpkin into the tray with the now-melted butter, add in your UNCOOKED gnocchis as well, and give it all a good stir. Chop up your sage (minus the stalks), and stir these through as well. Pop back in the oven for about 50-60 minutes, or until the pumpkin is cooked to your desired texture (some like it firm, some like it mushy!).
Remove from the oven once cooked to your liking, mix through some fresh greens (optional, we just had some rocket in the garden that went perfectly but you don’t NEED these!), and enjoy those delicious luscious balls of potato coated in sweet pumpkin and buttery sage mmmmmmmmmmmmm.
