I have always struggled to eat radicchio as it can be quite bitter…. BUT…… the combination of peach and radicchio in this salad, with the sweet spicyness of red onion, creaminess of our cheese, freshness of mint, and crunch of the pistachios, is honestly a real winner. Someone recently told me they put mint in almost everything they make. Since then I have added to all our salads and its soooooo good!! 💕🌱🍑
2 large peaches, sliced
1 head of radicchio, leaves separated and washed
1/2 red onion, thinly sliced
1/4 cup shelled pistachios, chopped
1/4 cup vegan Persian feta
A handful of fresh mint leaves
For the dressing:
2 tablespoons extra-virgin olive oil
1 tablespoon apple cider vinegar
1 teaspoon Dijon mustard
Salt and black pepper to taste
In a large bowl, combine the sliced peaches, radicchio leaves, and thinly sliced red onion.
In a small bowl, whisk together the extra-virgin olive oil, apple cider vinegar, Dijon mustard, salt, and black pepper to make the dressing.
Pour the dressing over the peach and radicchio mixture and toss gently to coat.
Sprinkle the chopped pistachios and vegan Persian feta over the top of the salad.
Garnish with fresh mint leaves.
