Soooooo can we take a minute to think about cheesecakes 🤤🤤 I am absolutely a baked cheesecake gal if given the choice BUT the right kinda raw cheesecake, with a sweet lemony finish and some crunch, is totally something I will scavenge away for myself 🤣
This healthy, convenient, and simple cheesecake recipe requires zero cooking is easy to follow, and is equally easy to devour 🍰 and satisfies a keen sweet tooth without the guilt 🌻
Raw Date & Nut Cheesecake
INGREDIENTS
🌱1 cup nuts of choice (we used almonds and walnuts)
🌱1 cup dates
🌱1 block @thevegandairy Ashed Chevre
🌱2/3 cup coconut cream
🌱½ cup raw sugar/coconut sugar
🌱Juice of half a lemon
METHOD
🌱Blend dates and nuts until crumbly
🌱Press into the base of a cake tin or baking dish
🌱At this point, you could bake the base for 10-15 mins if you prefer a drier/crumbly texture, or leave it raw
🌱Blend all remaining ingredients in a blender or food processor until smooth
🌱Pour over base and place in fridge or freezer (depending on the desired outcome) until set
