Ingredients

  • 1 cup nuts of choice (we used almonds and walnuts)
  • 1 cup dates
  • 1 block TVD Ashed Chevre
  • 2/3 cup coconut cream
  • ½ cup raw sugar/maple syrup/coconut sugar
  • Juice of half a lemon

Method

  • Blend dates and nuts until crumbly
  • Press into base of a cake tin or baking dish
  • At this point you could bake the base for 10-15 mins if you prefer a drier/crumbly texture, or leave it raw
  • Blend all remaining ingredients in a blender or food processor until smooth
  • Pour over base and place in fridge or freezer (depending on desired outcome) until set.
