INGREDIENTS:
SALAD
2 cups baby spinach
1 cup rocket
3 beetroots diced, roasted in the oven olive oil and Zaatar spices
1.5 cup chickpeas, roasted at same time as beetroot
¼ cup toasted pecans
5 radishes, sliced thinly

1 shallot diced
1 tbsp dijon mustard
1 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
