Simple Baked Chocolate and Vanilla Cream Donuts 🍩🍩🍩
3/4 cup soy milk
1 Tbl apple cider vinegar
1.5 cups plain flour
2.5 tsp baking powder
Pinch of salt
2 tsp sugar
Oil for brushing
3 Tbl sugar
2 tsp cinnamon

Preheat oven to 180C. Mix together the soy milk and apple cider vinegar in a small bowl and let rest for 5 minutes. The milk will thicken and curdle and create vegan buttermilk! In a large bowl add the flour, baking powder, salt and sugar and mix well. Slowly add the milk mixture and mix to create a dough. Knead the dough on the bench top for about 5 minutes or until smooth. Divide the dough into 12 even pieces and roll into balls. Place the dough balls on a baking tray and brush or spray with a little oil (I used avocado oil). Bake at 180C for 15 minutes, flipping half way through to make them golden all over.
While the donuts are baking, in a large bowl mix together the cinnamon and the sugar for the topping. Once the donuts have finished baking and are still warm, toss them through the cinnamon sugar and set aside to cool a little.
Use a thin knife to poke a hole in each donut and place a scoop of either the Dutch Chocolate Creme or Vanilla Bean Creme (or both) into the middle.
