Smokey Cacio e Pepe
INGREDIENTS:
500g spaghetti
2 tsp cracked pepper
1 block @thevegandairy Hemp Mozzarella, grated
1 Tbl nutritional yeast
7 cups water
2 tsp salt (plus more to taste)
METHOD:
💚 Add the water and salt to a large pan and bring to a boil. Add the spaghetti and cook, uncovered, stirring occasionally, for eight minutes (about two-thirds of the packet cooking time)
💚 Stir in the grated mozzarella, nutritional yeast and pepper and cook a further 3-4 minutes. It will look scarily liquidy at first but trust the process and the cheese will melt into the pasta water and create a creamy, luscious sauce. Add salt to taste and enjoy!
