Have you ever made this simple traditional Turkish pastry? You will NOT regret it AND it is a perfect recipe to try if you are doing Veganuary and trying new things to ‘veganise’ your plate 💚
INGREDIENTS
Pastry:
2 cups plain flour
2 Tbl olive oil
1/2 cup lukewarm water
1 tsp instant yeast
1/2 tsp salt
Filling:
Baby spinach, roughly chopped
1 jar @thevegandairy feta, diced
2 Tbl fresh herbs (I used a mix of dill, mint, coriander and chives)
1 tsp za’atar (optional)
A squeeze of lemon juice
Salt and pepper to taste
METHOD
Mix together all pastry ingredients until you get a soft and pliable dough. I use my stand mixer with a dough hook on a low setting for about 8 minutes. You can knead by hand, it’ll take about 15 minutes. Roll your dough into a ball and cover with a damp cloth and let sit for 20mins.
Meanwhile, mix together the spinach, feta, herbs, lemon juice and salt and pepper.
On a floured work surface, cut dough into four equal pieces. Roll each piece into a rectangle. Layer the feta and spinach mixture onto one half of the rectangle before sprinkling with lemon juice. Fold the top over and seal the sides of the dough.
Add a little oil to a heavy-based pan on medium heat and then add the gozleme. Cool about 3 mins each side until golden and crispy. Remove from the pan and slice into wedges. Serve with an extra squeeze of lemon juice 🍋
