Spinach Feta Crispy Gozleme

Have you ever made this simple traditional Turkish pastry? You will NOT regret it AND it is a perfect recipe to try if you are doing Veganuary and trying new things to ‘veganise’ your plate 💚⁠


INGREDIENTS ⁠

Pastry:⁠
2 cups plain flour⁠
2 Tbl olive oil⁠
1/2 cup lukewarm water⁠
1 tsp instant yeast⁠
1/2 tsp salt⁠

Filling:⁠
Baby spinach, roughly chopped⁠
1 jar @thevegandairy feta, diced⁠
2 Tbl fresh herbs (I used a mix of dill, mint, coriander and chives)⁠
1 tsp za’atar (optional)⁠
A squeeze of lemon juice⁠
Salt and pepper to taste⁠


METHOD⁠

Mix together all pastry ingredients until you get a soft and pliable dough. I use my stand mixer with a dough hook on a low setting for about 8 minutes. You can knead by hand, it’ll take about 15 minutes. Roll your dough into a ball and cover with a damp cloth and let sit for 20mins.⁠

Meanwhile, mix together the spinach, feta, herbs, lemon juice and salt and pepper.⁠

On a floured work surface, cut dough into four equal pieces. Roll each piece into a rectangle. Layer the feta and spinach mixture onto one half of the rectangle before sprinkling with lemon juice. Fold the top over and seal the sides of the dough.⁠

Add a little oil to a heavy-based pan on medium heat and then add the gozleme. Cool about 3 mins each side until golden and crispy. Remove from the pan and slice into wedges. Serve with an extra squeeze of lemon juice 🍋⁠
