These Spinach & Feta Rolls are so quick and easy you could have made them this morning before work, and cooked the up fresh for lunch 🙃 Your new lunch plan for tomorrow now? 😁🌱
INGREDIENTS:
250g frozen spinach, thawed and well-drained
1 x 225g jar @thevegandairy Persian Feta
1 cup rolled oats
1 tbsp salt
1 garlic clove
Puff pastry sheets
Plant milk of choice
Sesame seeds
METHOD:
Preheat oven to 200c. Place spinach, feta, oats, salt and garlic into a food processor and blend until smooth. Cut a thawed sheet of puff pastry in half and spread the mixture down the middle. Roll pastry and seal. Cut into desired sized pieces, brush with milk and sprinkle
** make sure you save the yummy oil marinade from your Persian Feta jar once you have used the cheese. It is perfect to use in salads, roasting some veggies, making flavourful bread dough, or making pasta! Or just pop in a dish next to a dish of balsamic and dip torn pieces of bread in.. Yummo!!
