This stuffed portobello mushroom recipe will send your taste buds out of this world .. or maybe convert you to a mushroom hog like me 😁🪐🙌
INGREDIENTS
4 large portobello mushrooms, cleaned
1/2 block @thevegandairy smoked mozzarella, grated
2 Tbl @thevegandairy Garlic and Sage butter
1-2 tsp fresh thyme leaves
1 Tbl fresh chopped parsley
1/2 cup breadcrumbs
1/4 cup walnuts, chopped
1/2 brown onion
Salt and pepper to taste
METHOD
Preheat oven to 200c. Remove the stalks of the mushrooms. Dice the stalks and add to a large bowl. To the same bowl add the remaining ingredients and mix well. Spoon the mixture into each mushroom until full. Place on a baking tray and bake for 20-25 minutes or until cheese is melted and mushrooms are cooked through.
