INGREDIENTS
500g cherry tomatoes
1 brown onion, chopped
1 red capsicum, chopped
1 eggplant, chopped
2 tbsp oil of choice
1 tbsp crushed garlic
200g The Vegan Dairy Red Bell Pepper
1 tbsp dried chilli flakes
2 tbsp dried oregano
Salt and pepper
1/4 cup tomato sauce
1/2 cup fresh basil, chopped roughly
500g pasta of choice
METHOD
🍅 Preheat oven to 200 degrees C.
🍅Add the onion, tomatoes, eggplant, capsicum, oil and garlic to a deep baking dish and mix to coat. Add the cheese in the centre and sprinkle on the chilli, oregano and S & P. Bake for 30-35 minutes.
🍅Once baked, crush the tomatoes with a fork. Add the tomato sauce and fresh basil, then mix lightly. Add cooked pasta and mix through. ENJOY ❤️
