Recipe Below 👇🏼 .. Delish, quick, and easy three ingredient vegan pesto scrolls
🌿 1 batch of pizza dough (store bought or homemade) OR puff pastry for a quicker option (this will yield a more flakey option)
🌿 Vegan basil pesto
🌿 @thevegandairy smoked mozzarella, shredded
🌿 Plant milk for brushing (optional)
Preheat oven to 190C
Roll the pizza dough out into a large rectangle, or if using puff pastry allow a sheet to thaw to room temp on the bench.
Spread the pesto all over the top of the dough / pastry. Generously sprinkle the shredded smoked mozzarella on top of the pesto (keep a little aside for topping).
Roll the dough / pastry up into a long sausage shape. Use a sharp knife to cut the dough into small rounds, about 1 cm thick.
Place the rounds onto a lined baking tray, starting from the middle and working out. The scrolls should be just touching but not packed too tightly (they will expand when baking). If using puff pastry they will expand more than with the dough so leave a very small space between each scroll. Brush with plant milk and top with remaining mozzarella.
Bake for about 20mins or until golden and cheese melted.
