Traditional French Buckwheat Crepes 2 ways!! Amazing and SIMPLE wholefoods recipe care of @veganonthegc.. Totally drooling 🤤

🍌🍯Caramelised banana with Crème fraiche, maple & toasted coconut OR
🍫🍓Dutch Chocolate Creme with fresh strawberries
Preparation time: 10 minutes, cooking time: 10-15 minutes

Makes 6-8 crepes

INGREDIENTS

Crepes:
1 cup buckwheat flour (untoasted)
1 Tbs coconut sugar
1 Tbs flaxseed meal – finely ground
400ml almond milk or coconut milk (a little more if needed)
1 tsp pure vanilla extract
1 Tbs melted Vegan Dairy Cultured Butter (extra for cooking)
2 bananas, halved & sliced lengthways

Fillings:
2 tsp Vegan Dairy Cultured butter
2 tsp coconut sugar
2 tsp maple syrup
2 tsp toasted flaked coconut
3 – 4 Tbs Crème Fraiche (The Vegan Dairy)
3 – 4Tbs Dutch Chocolate Crème (The Vegan Dairy)
8- 10 strawberries, washed sliced – extra for garnish

METHOD
🥞 Mix flour, flaxseed meal and coconut sugar in a bowl, make a well in the centre and pour in the combined vanilla and plant milk slowly, mixing to combine.
🥞 Melt cultured butter in a non-stick frypan over medium-high heat and carefully pour about ¼ cup of the batter over the base of the pan and spread out quickly with a spatula to ensure the crepe is as thin as possible. The batter should have some small bubbles which is great as it will make the crepes lighter. (If the batter is too thick, add more plant milk)
🥞 Flip when lightly browned and cook the other side. Add a little extra butter to pan with each crepe if required. Place cooked crepes on a plate.
🥞 In the same frypan, melt 2 tsp of cultured butter over medium heat and gently place the bananas. Sprinkle with coconut sugar, reduce the heat and allow them to caramelize.
🥞 Lay 2 crepes on a plate. Spread one crepe with 2 tsp of crème fraiche and place a couple of pieces of banana on top, drizzle with maple syrup and toasted coconut. On
the second crepe, spread 2 tsp of the Dutch Chocolate Crème and 2 sliced strawberries. You can serve the crepes open or roll the them up & decorate with a dollop of crème fraiche and a fanned strawberry!
