HOW GORGEOUS is this canapé idea!! These Whipped Feta with Roasted Grapes bite sized mouth explosions are not such a common flavour pairing, but are the perfect entertaining treat and will NOT disappoint! Are you keen to try these..? 😉
For the Roasted Grapes:
3 small bunches of seedless grapes – around 30-40 grapes
1 sprig of fresh thyme
Pinch of salt
2 tablespoons olive oil
For the Whipped Feta:
120g feta – I used @thevegandairy Persian Feta
2-3 tablespoons dairy free cream – I used Oatly’s Creamy Oat
Bake the roasted grapes:
Preheat the oven to 220C. Line a baking tray with foil. Place all the ingredients for the roasted grapes and toss to coat the grapes lightly with olive oil. Roast for 20-30 minutes. The grapes should be blistered with some caramelisation. Once done, set aside. Ideally, you would like to serve the grapes at room temperature or warm.
Make the whipped feta by blending the feta and cream until smooth. You can add a few drops of lemon if you like that extra zing.
Assemble by spreading the whipped feta on any vessel of your choice (crackers, crostinis, etc), and top with a few roasted grapes and a small spring of thyme.
